Cheese Soup

This recipe is a snap to make and everyone loves it!  It’s not as good as the cheese soup that was made at the restaurant “Say Cheese” in London (now closed) but it’s pretty good.

2 Tbsp butter, 1/2 c. chopped onion, 1/2 c. chopped carrot, 1/2 c. chopped celery, 1 clove minced garlic: saute 8-10 minutes.

Then add: 3 c. chicken stock, 1/2 c. crumbled stilton, 1/2 c. diced old cheddar, 1/8 tsp. baking soda, 1 c. heavy cream, 1/2 c. white wine, dash cayenne pepper and 1 bay leaf.

B ring to boil. Reduce heat and simmer for 10 mins. Remove the bay leaf, puree and serve.

Mmmmm good!
